Bite Sized Peanut Butter Pies with Chocolate Crust!
No one can deny the joy and happiness that peanut butter and chocolate brings to people. In fact, they are a dessert heaven!
I can’t forget the day I came across this recipe to make bite-sized peanut butter pies with chocolate crust. I was so happy and my kids were very excited.
The good thing about these yummies is that they are simple, easy and they take no bake time. .
Ingredients:
1) 2 cups all-purpose flour
2) 4 tablespoons unsweetened cocoa powder
3) 4 tablespoons sugar
4) 1 teaspoon kosher salt
5) 1 stick unsalted butter, cold
6) 4 tablespoons Crisco
7) Yolk from 2 large eggs
8) 6 – 8 tablespoons iced coffee (Ice water will work as well.)
Peanut butter filling:
1 cup creamy peanut butter
1 package (8 ounce) cream cheese, softened
1 teaspoon vanilla
1 1/4 cup confectioners’ sugar
1 package (8 ounce) Cool Whip, thawed
Chocolate Drizzle:
1 cup semi-sweet chocolate chips
1 tablespoon Crisco
Chopped peanuts (optional)
Now the instructions part:
Start by preheating your oven to 350 degrees F. Then in mix the cocoa, sugar, salt with the flour in a food processor on low until well- combined. After that add the butter and Crisco and beat thoroughly.
Now add the egg yolks and iced coffee and with slow pulses process the dough until it takes a ball shape. (add 5 Tbs of iced coffee and add more until the mixture comes together.
Roll the dough flat, cut into two discs and place it in a refrigerate after you wrapped it in plastic.
After 30 minutes get your dough and flatten until it’s about 1/8 inch thick. As seen in the picture take a flour shaped cookie cutter and cut your dough into small flowers. Next step is to ball up the dough and roll it out again. Do the same thing with the whole dough you have.
Get an ungreased mini muffin pan and start pressing slowly your flowers into it.
Now the baking part. Bake for at least 13 minutes. After that, put them to cool completely so that they are easily removed from the pan.
Don’t waste time, beat the peanut butter with the cream cheese and vanilla while your flowers are cooling. After that, add the powdered sugar, beating again until smooth.
Now add the cool whip,mix well and add this filling into a piping bag to pipe into your cooled chocolate pie shells.
The last thing is the chocolate drizzle. melt the chocolate chips and shortening in a microwavable bowl. let cool a bit and drizzle onto the filled pie shells.
